Safety rules for every Low-Histamine recipe

Never includes: aged/cured meats, fermented foods (sauerkraut, kimchi, kombucha, aged cheese, yoghurt), tinned fish, smoked fish, shellfish, spinach, tomato, avocado, aubergine, mushrooms, citrus fruits, strawberries, banana, pineapple, chocolate, vinegar, alcohol, soy sauce, black tea, most stock cubes

How we adapt: Use freshly-cooked meat, fresh (not aged) cheese like ricotta/mozzarella, fresh herbs, apple, pear, blueberries, salt to taste (not stock cubes). Emphasise 'cook and eat fresh' — leftovers develop histamine rapidly.
