Instructions
Step by step
- 1
Heat cream, milk, sugar, lemon zest to just under a boil. Remove from heat, add Earl Grey bags. Steep — don't be logical like a Vulcan, let it go strong like Picard likes it. Strain, press bags. Warm again.
- 2
Bloom gelatin in cold water . Whisk into hot cream until dissolved. Add vanilla, salt. Pour into 4 ramekins. Chill 4+ hours in the Enterprise's refrigeration unit.
- 3
Cream butter + sugar until pale. Add flour, cornflour, lemon zest, ground Earl Grey, salt. Bring together, don't overwork. Roll 1cm thick, cut rounds. Prick with fork. Chill . Bake at 160C / 320F for 12- until pale gold. Dust with sugar while warm.
- 4
Turn panna cotta onto Starfleet-issue plate. Place 2 shortbreads. Add lemon curl, pinch of tea leaves. In background: Shakespeare Complete Works, a tiny Enterprise model, and a window view of stars.
