400 g courgettes — coarsely grated
1 tsp salt — for draining courgettes
100 g feta cheese — crumbled
3 piece spring onions — finely chopped
3 tbsp fresh dill — chopped
60 g plain flour
2 piece eggs — beaten
0.5 tsp black pepper — freshly ground
4 tbsp vegetable oil — for frying
200 g natural yoghurt
1 clove garlic clove — crushed
1 tbsp lemon juice

Instructions

Place the grated courgettes in a colander, sprinkle with 1 teaspoon of salt and leave for to draw out moisture. Squeeze the courgettes firmly in a clean tea towel to remove as much liquid as possible.

In a large mixing bowl, combine the drained courgettes, crumbled feta, chopped spring onions, dill, flour, beaten eggs and black pepper. Mix well until everything is evenly combined.

In a small bowl, mix together the natural yoghurt, crushed garlic, lemon juice and a pinch of salt to make the dip. Set aside in the fridge.

Heat 2 tablespoons of vegetable oil in a large frying pan over medium heat. Drop heaped tablespoons of the courgette mixture into the pan, flattening slightly with the back of the spoon. Do not overcrowd the pan.

Fry for 3– on each side until golden brown and crisp. Remove and drain on kitchen paper. Repeat with the remaining mixture, adding more oil as needed.

Serve the fritters warm with the garlic yoghurt dip on the side, and a simple green salad if desired.
