Instructions

Step by step

  1. 1

In a small saucepan, combine the chopped dried figs, sugar, water, and orange zest strip. Simmer gently for until the sugar dissolves and the figs soften. Stir in a pinch of sea salt. Let it cool completely.

  2. 2

Once cool, strain through a fine-mesh sieve into a clean jar. Reserve 15g for the cocktail.

  3. 3

In your cocktail shaker, combine all the cocktail ingredients: spiced rum, Disaronno Velvet, 15g of cooled Fig Syrup, orange bitters, clean protein powder, and aquafaba.

  4. 4

Dry shake intensely (without ice) for a full 30 seconds.

  5. 5

Add a generous scoop of ice cubes (4–5 large cubes) to the shaker.

  6. 6

Wet shake vigorously for 10–12 seconds until the shaker is ice-cold on the outside.

  7. 7

Strain the contents into a chilled, heavy ceramic tumbler or rock glass.

  8. 8

Garnish by dusting lightly with grated nutmeg, placing the goji berries neatly on the foam, and resting the fig-threaded brass pick across the rim.
