1.5 tsp bicarbonate of soda
1 tsp sea salt

350 ml unsweetened almond milk — or other plant milk
3 tbsp treacle
1 tbsp lemon juice

Preheat the oven to 200°C (180°C fan) and line a baking tray with baking parchment.

In a large bowl, whisk together both flours, bicarbonate of soda, salt and cinnamon.

In a jug, whisk the almond milk, treacle and lemon juice until the treacle has dissolved; the mixture will curdle slightly.

Stir the raisins into the dry ingredients, then pour in the wet mixture.

Use a wooden spoon to mix quickly into a soft, slightly sticky dough—do not overmix.

Turn the dough onto a lightly floured surface and shape gently into a round about 18 cm across.

Place on the prepared tray and score a deep cross on top with a sharp knife.

Bake for 35– until the loaf sounds hollow when tapped on the base and a skewer inserted into the centre comes out clean.

Cool on a wire rack for at least before slicing.
