600 ml chicken stock
400 g sweet potato — peeled and cut into 3cm chunks
200 g tinned chopped tomatoes
0.5 tsp cayenne pepper
1 tsp ground coriander
1 tsp sea salt
1 bunch fresh coriander — roughly chopped, for garnish

Heat the groundnut oil in a large heavy pot over medium-high heat. Season the chicken pieces with salt and brown them on all sides, about . Remove and set aside.
