200 g light brown sugar
4 tbsp maple syrup
2 piece medium eggs — beaten
1 tsp vanilla extract
200 g plain flour
1 tsp baking powder
0.5 tsp salt
100 g pecans — roughly chopped

Preheat the oven to 180°C (160°C fan) and line a 20×20 cm square tin with baking parchment.

In a large bowl, whisk together the melted butter, brown sugar and maple syrup until smooth.

Add the beaten eggs and vanilla extract, whisking until well combined.

Sift in the flour, baking powder and salt, then fold gently until just combined.

Stir through the chopped pecans, reserving a handful for the top.

Pour the batter into the prepared tin, smoothing the surface, and scatter the reserved pecans over.

Bake for 25– until the top is golden and a skewer inserted into the centre comes out with a few moist crumbs.

Leave to cool completely in the tin before cutting into 16 squares.
