1 tablespoon Dijon mustard
0.5 cup chicken broth
2 tablespoons apple cider — or apple juice
1 tablespoon apple cider vinegar
2 tablespoons brown sugar — or coconut sugar
0.5 teaspoon cinnamon
0.5 teaspoon smoked paprika
0.5 teaspoon garlic powder
salt — to taste
pepper — to taste
Parmesan — for topping
parsley — for topping
Instructions
Step by step

Season pork with salt, pepper, cinnamon, paprika, and garlic powder.

Heat butter and olive oil in a skillet over medium-high heat. Sear pork 3– per side until deeply golden. Remove from pan.

Add apples and cook until softened and caramelized.

Stir in maple syrup, Dijon, broth, apple cider, vinegar, and brown sugar. Simmer until thick and glossy.

Add pork back into the pan and spoon sauce over the top. Cover and braise on low 8– until tender.

Sprinkle parmesan on top and broil 1– for that crispy caramelized crust.

Finish with parsley and extra sauce over the top.
