In a medium bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger until the sugar dissolves.

Add the thinly sliced beef to the marinade, ensuring every piece is well coated. Cover and refrigerate for at least 2 hours (or overnight) to let the flavors deeply penetrate the meat.

Heat vegetable oil in a large skillet or cast-iron wok over high heat until smoking hot.

Working in batches to avoid crowding the pan, add the beef in a flat layer and sear for 1– per side until beautifully caramelized, deeply browned, and slightly crisp on the edges.
