      The Story: Haneeth means "tender". The meat is never boiled — it's dry-rubbed and roasted for hours under foil so its own juices steam it. The result is smoky, buttery, and deeply aromatic.

      • 1 tbsp black pepper, 1 tbsp coriander seeds, 1 tsp cumin seeds

      • 1 tsp whole cloves, 6-7 green cardamom pods, 1 tsp turmeric, 1 tsp sea salt

      • 2 kg bone-in lamb — leg or shoulder with fat, cut into large chunks

      • 2 tbsp white vinegar (helps tenderize)

      • 4 cups aged basmati rice, washed and soaked

      • 3 tbsp ghee, whole spices (2 cinnamon sticks, 4 cardamom, 4 cloves)

      • Pinch saffron soaked in 1/4 cup warm water

      • 1/3 cup golden raisins, toasted almonds, pine nuts, and fresh coriander/parsley

      • Dates and green Arabic coffee to serve

      Toast the coriander, cumin, cloves, cardamom and pepper in a dry pan , then grind with turmeric and salt. This is your Haneeth masala.

      Rub lamb with garlic, vinegar, olive oil, and all the spice mix. Cover and rest 2-12 hours — overnight is best for National Day feasts.

      Preheat oven to 160°C / 320°F. Line a deep roasting tray with two layers of foil, place a rack or onion slices at the bottom, add lamb, add 1 cup water to the tray (not over meat), seal tightly with foil. Roast 3.5-4 hours until meat is falling off the bone and succulent. Open foil last to brown.

      In a pot, sauté onion in ghee with whole spices until golden. Add drained rice, stir , add 5.5 cups hot water, salt, and half the saffron water. Cook covered low . Drizzle remaining saffron for golden streaks.

      On a large brass siniyah, spread the rice, place the whole lamb shank proudly on top. Spoon meat juices over. Shower with toasted almonds, pine nuts, raisins, and herbs. Surround with dates, small Saudi flags, lanterns, and a dallah of coffee.

      1. Don't skip the fat — it keeps Haneeth moist.

      2. For extra smokiness, place a small foil cup with a hot charcoal and a drop of ghee inside the sealed tray for after roasting.

      3. Serve family-style, eating with hands is sunnah and more joyful.
