250 grams smoked mackerel fillets — Remove the skin from the mackerel and flake the fish
120 grams mixed herb salad leaves — bag
2 hard boiled eggs — quartered or 8 quail eggs, hard boiled and shelled
8 cherry tomatoes — halved
125 grams fine green beans — cooked
6 pitted black olives
1 tablespoon olive oil — for croutons
1 clove garlic — crushed
2 slices white bread — crusts removed and diced (Alternatively use readymade croutons)
2 tablespoons olive oil — for dressing
1 tablespoon white wine vinegar — for dressing
0.5 teaspoon wholegrain mustard — for dressing
salt — to taste
black pepper — freshly ground, to taste (Alternatively use Sainsbury's fresh vinaigrette)

Instructions
Step by step

Arrange the salad leaves on a large serving plate.

Arrange the mackerel, eggs, tomatoes, beans and olives on top.

To make the croutons, heat the oil in a frying pan, add the garlic and breadcrumbs and fry for 1- each side until golden. Drain on kitchen paper, allow to cool and sprinkle over the salad.

Mix the dressing ingredients together and pour over the salad just before serving.
