  • 250 grams smoked mackerel fillets — Remove the skin from the mackerel and flake the fish

  • 120 grams mixed herb salad leaves — bag

  • 2 hard boiled eggs — quartered or 8 quail eggs, hard boiled and shelled

  • 8 cherry tomatoes — halved

  • 125 grams fine green beans — cooked

  • 6 pitted black olives

  • 1 tablespoon olive oil — for croutons

  • 1 clove garlic — crushed

  • 2 slices white bread — crusts removed and diced (Alternatively use readymade croutons)

  • 2 tablespoons olive oil — for dressing

  • 1 tablespoon white wine vinegar — for dressing

  • 0.5 teaspoon wholegrain mustard — for dressing

  • salt — to taste

  • black pepper — freshly ground, to taste (Alternatively use Sainsbury's fresh vinaigrette)

Instructions

Step by step

    Arrange the salad leaves on a large serving plate.

  2. 2

    Arrange the mackerel, eggs, tomatoes, beans and olives on top.

  3. 3

    To make the croutons, heat the oil in a frying pan, add the garlic and breadcrumbs and fry for 1- each side until golden. Drain on kitchen paper, allow to cool and sprinkle over the salad.

    Mix the dressing ingredients together and pour over the salad just before serving.
