100 g fine cornmeal
120 g caster sugar
2 tsp baking powder
0.25 tsp salt
2 piece eggs
120 ml whole milk
60 g unsalted butter — melted and cooled
1 piece lemon — zest only
150 g blueberries — fresh or frozen
1 tbsp icing sugar — for dusting

Instructions
Step by step

Preheat your oven to 180°C (160°C fan). Grease and line a 20 cm square tin with baking parchment.

In a large bowl, whisk together the flour, cornmeal, caster sugar, baking powder and salt.

In a separate bowl, beat the eggs lightly, then whisk in the milk, melted butter and lemon zest.

Pour the wet ingredients into the dry and fold gently until just combined—do not over-mix.

Fold in the blueberries.

Pour the batter into the prepared tin and smooth the top.

Bake for 30–, or until a skewer inserted into the centre comes out clean and the top is golden.

Cool in the tin for , then turn out onto a wire rack. Dust with icing sugar before slicing.
