250 g rolled oats
120 g unsalted butter — melted
80 g honey
1 piece lemon — zest and juice
50 g plain flour
0.5 tsp baking powder
0.25 tsp salt
1 piece egg — beaten

Instructions
Step by step

Preheat your oven to 180°C (160°C fan). Grease and line an 18 cm square baking tin with baking parchment.

In a large bowl, mix the oats, flour, baking powder and salt.

In a small pan, warm 60 g of the honey with the melted butter and lemon zest over low heat, stirring until combined.

Pour the honey butter over the oats, add the beaten egg and stir well to coat all the oats.

Press the mixture firmly into the prepared tin, smoothing the top.

Bake for 25–, until the edges are golden and the centre is set.

Meanwhile, in the same small pan, warm the remaining 20 g of honey with the lemon juice.

As soon as the bake comes out of the oven, drizzle the lemon-honey syrup evenly over the top.

Cool completely in the tin before cutting into 9 squares.
