80 g pecans — roughly chopped
150 ml maple syrup
200 ml plant-based milk — unsweetened oat or soy
80 ml sunflower oil
1 tsp apple cider vinegar

Preheat your oven to 180°C (160°C fan). Line a 20 cm square tin with baking parchment.

In a large bowl, whisk together the flour, baking powder and cinnamon. Stir in the pecans.

In a jug, combine the maple syrup, plant-based milk, sunflower oil and apple cider vinegar.

Pour the wet ingredients into the dry and fold gently with a spatula until just combined—do not overmix.

Scrape the batter into the prepared tin and spread level.

Bake for 30– until a skewer inserted in the centre comes out clean. Cool in the tin for , then turn out onto a wire rack.

Cut into 12 squares once fully cooled.
