4 piece cod fillets — skinless, about 150 g each
60 g wholemeal breadcrumbs
3 tbsp fresh parsley — chopped
1 tsp lemon zest
2 tbsp olive oil
1 clove garlic — minced
1 pinch black pepper
1 tbsp lemon juice

Preheat your oven to 200°C (fan 180°C, gas mark 6). Line a baking tray with baking parchment.

Place the cod fillets on the prepared tray and drizzle each with a little olive oil and lemon juice.

In a small bowl, mix the breadcrumbs, parsley, lemon zest, garlic and black pepper. Stir in 1 tbsp olive oil until the mixture clumps lightly.

Press the breadcrumb mixture evenly onto the top of each fillet.

Bake for 12–, until the fish flakes easily and the crust is golden and crisp.

Serve hot with steamed vegetables or mashed potatoes.
