500 ml clear apple cider (non-alcoholic)
75 g caster sugar
1 piece cinnamon stick
3 tsp powdered gelatine
3 tbsp cold water

- · 4 jelly moulds or small serving glasses
Instructions

Pour the cold water into a small bowl and sprinkle the gelatine over the surface. Let stand for to bloom.

In a medium saucepan, combine the apple cider, sugar and cinnamon stick. Heat gently over medium heat, stirring, until the sugar has dissolved. Do not boil.

Remove from the heat and stir in the bloomed gelatine until completely dissolved.

Remove the cinnamon stick and pour the mixture through a fine sieve into a jug.

Divide the jelly mixture among 4 individual jelly moulds or small serving glasses.

Chill in the fridge for at least 3 hours, or until fully set and wobbly.

To serve, dip the base of each mould briefly in warm water and turn out onto serving plates, or serve directly in glasses.
