3 tbsp maple syrup
1 tbsp wholegrain mustard
1 tbsp olive oil
300 g green beans — trimmed
2 clove garlic — peeled and thinly sliced
0.5 tsp sea salt
0.5 tsp black pepper — freshly ground

Instructions

Preheat your oven to 200°C (180°C fan). Line a baking tray with baking parchment.

In a small bowl, whisk together the maple syrup, wholegrain mustard, half the olive oil, salt and black pepper.

Place the salmon fillets skin-side down on the prepared tray and brush the glaze generously over the top of each fillet.

Bake in the preheated oven for 12– until the salmon is just cooked through and the glaze is glossy and caramelised.

Meanwhile, bring a large pan of salted water to the boil. Add the green beans and cook for 4– until tender-crisp, then drain well.

Heat the remaining olive oil in a frying pan over medium heat, add the sliced garlic and cook for until fragrant. Toss through the drained beans.

Serve the glazed salmon hot with the garlicky green beans alongside.
