Preheat the oven to 180°C (160°C fan). Line a 12-hole muffin tin with paper cases.

In a large bowl, whisk together the flour, baking powder, 1 tsp cinnamon and salt.

In another bowl, whisk together 150 g caster sugar, 100 g melted butter, beaten eggs, milk and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and fold gently until just combined; do not overmix.

Divide the batter evenly among the muffin cases, filling each about two-thirds full.

Bake for 18–, until risen, golden and a skewer inserted into the centre comes out clean.

While the muffins bake, mix 75 g caster sugar and 1 tsp cinnamon in a shallow bowl. Melt 50 g butter in a separate small bowl.

Once the muffins are baked, allow them to cool for , then brush each muffin top with melted butter and roll in the cinnamon sugar mixture.
