3 tbsp soy sauce
1 tbsp gochujang chili paste — 1–2 tbsp to taste
3 tbsp honey
bourbon — a good splash
1.5 tbsp rice vinegar
2 tbsp ketchup — 2–3 tbsp to taste
3 string garlic cloves — minced
1 tsp water — 1–2 tsp if needed
sesame seeds — for garnish
scallions — thinly sliced, for garnish
garlic sour cream — for dipping

Pat the chicken wings thoroughly dry with paper towels. Toss with a drizzle of neutral oil, baking powder, paprika, garlic powder, salt, and pepper until evenly coated.

Arrange the wings in a single layer in your air fryer basket. Air fry at 390°F (200°C) for 18–, shaking the basket halfway through, until deeply golden and extra crispy.

In a small saucepan, combine the soy sauce, gochujang, honey, rice vinegar, ketchup, and garlic. Simmer over medium heat for 5– until thick and glossy. Pour in the bourbon and simmer for another 2– until rich and sticky.

Transfer the hot, crispy wings directly into a bowl, pour the warm gochujang bourbon glaze over the top, and toss to coat every bite. Garnish with sesame seeds and scallions, then serve with sour cream!
