3 piece courgettes — medium, about 450 g total
100 g mature cheddar — cubed
20 g fresh parsley — roughly chopped
10 g fresh mint — leaves picked
30 g sunflower seeds — lightly toasted
1 piece lemon — juice and zest
3 tbsp extra virgin olive oil
1 tsp runny honey
0.5 tsp fine sea salt
0.25 tsp black pepper — freshly ground

Instructions
Step by step

Use a vegetable peeler to shave the courgettes into long, thin ribbons, stopping when you reach the seedy core. Discard the core.

Place the courgette ribbons in a large serving bowl. Add the cheddar cubes, parsley, mint and toasted sunflower seeds.

In a small jug, whisk together the lemon juice, lemon zest, olive oil, honey, salt and pepper until combined.

Pour the dressing over the salad and toss gently with your hands or salad servers.
