4 piece salmon fillets (skin-on) — about 150 g each
400 g Brussels sprouts — trimmed and halved
2 tbsp olive oil
3 tbsp pure maple syrup
1 tsp Dijon mustard
1 clove garlic — minced
1 tsp sea salt
0.5 tsp black pepper — freshly ground

Preheat the oven to 200 °C (fan 180 °C). Toss the halved Brussels sprouts with 1 tablespoon olive oil, half the salt and half the pepper; spread on a baking tray in a single layer.

Roast the sprouts for 20–, turning halfway, until golden and tender.

Meanwhile, whisk together the maple syrup, Dijon mustard and minced garlic in a small bowl.

Heat the remaining 1 tablespoon olive oil in a large frying pan over medium-high heat. Season the salmon fillets with the remaining salt and pepper.

Place the salmon skin-side down in the hot pan and cook for without moving.

Flip the fillets, brush the tops generously with the maple glaze and cook for a further , or until the salmon is just cooked through.
