    In a large bowl, combine the flour, yeast, sugar and salt. Make a well in the centre and pour in the warm water and oil. Mix until a shaggy dough forms.

    Turn out onto a floured surface and knead for 8– until smooth and elastic. Place in a lightly oiled bowl, cover with a damp tea towel, and leave to rise in a warm spot for or until doubled in size.

    Meanwhile, mix the grated sulguni, crumbled feta and egg whites in a bowl until well combined. Set aside.

    Preheat your oven to 220°C (200°C fan).

    Punch down the risen dough and divide into 4 equal pieces. Roll each piece into an oval about 20 cm long and 12 cm wide.

    Spread a quarter of the cheese mixture down the centre of each oval, leaving a 2 cm border. Fold the long edges up and over the filling, then twist and pinch the short ends to form a boat shape with an open centre.

    Place the khachapuri on lined baking trays. Bake for 12– until the edges are golden and the cheese is bubbling.
