125 g Plain Flour
300 ml Milk
1 Unit Egg
1 nob Butter
1 pinch Salt
3 Units Lemons
3 Tsp Sugar

Sieve flour into a bowl and mix in the salt
- 2
Add the beaten egg and then start slowly beating in to the flour whilst at the same time gradually adding the milk and continuing to beat more vigorously.

Heat a nob of butter in the pan to a medium-high heat.

Add a small quantity of batter (about 3 Tbsp) tipping the pan and swirling around to coat the base of the pan with a thin layer of batter.

As soon as the pancake starts to brown, flip the pancake over (you may need a spatula to help you until you master this). Once it starts to again brown, tranfer to a plate and start the process again with the next pancake

My preference is lemon and sugar but you can make savoury or sweet pancakes. Experiment and have some fun

For lemon and sugar, I tend to sprinkle with 1/4 -1/2 tsp of sugar and add lots of squeezed lemon.
