200 g sweetcorn kernels — tinned or frozen and defrosted
1 piece red pepper — deseeded and diced
3 piece spring onions — finely sliced
20 g fresh coriander — chopped
2 piece lime — juiced
3 tbsp olive oil
1 tsp ground cumin
1 pinch black pepper — to taste

Instructions
Step by step

In a large serving bowl, combine the black beans, sweetcorn, diced red pepper and spring onions.

In a small jug, whisk together the lime juice, olive oil, ground cumin and black pepper until well combined.

Pour the dressing over the salad and toss gently to coat all the ingredients.

Fold in the chopped coriander just before serving.
