History

The Victoria Sandwich, named after Queen Victoria, emerged in mid-Victorian Britain as a celebration cake for afternoon tea. Isabella Beeton's 1861 recipe helped standardise this simple sponge cake filled with jam. The cake reflected technological advances—refined white flour, baking powder, and affordable sugar made light sponges accessible to middle-class households. Queen Victoria reportedly favoured such cakes with her afternoon tea, lending royal cachet to the recipe. The Victoria Sandwich became Britain's quintessential teatime cake, evolving into today's Victoria Sponge with jam and buttercream filling, remaining a staple in British baking.

Ingredients

  • · 225g softened butter
  • · 225g caster sugar
  • · 4 large eggs
  • · 225g self-raising flour
  • · 1 tsp baking powder
  • · 1 tsp vanilla extract
  • · For filling: 6 tbsp raspberry jam, 300ml double cream, whipped
  • · Icing sugar to dust

Method

    Preheat oven to 180°C. Butter and line two 20cm cake tins.

    Cream butter and sugar until pale and fluffy (5 min).

  3. 3

    Beat in eggs one at a time, adding 1 tbsp flour with each.

    Fold in remaining flour, baking powder and vanilla.

    Divide between tins; bake 25 minutes until golden and springy.

    Cool completely on a rack.

    Sandwich with jam then whipped cream. Dust generously with icing sugar.
