Step by step

    Place the lamb chunks, halved onions, bay leaves, peppercorns and 1 teaspoon salt in a large pot with the 2 litres of water. Bring to the boil, then skim off any foam.

    Lower the heat and simmer gently for 2 hours until the lamb is very tender and the broth is deeply flavoured. Top up with water if necessary.

    Meanwhile, make the pasta: in a large bowl combine the flour and ½ teaspoon salt. Add the beaten egg and enough water to form a firm but pliable dough.

    Knead on a lightly floured surface for until smooth and elastic. Cover with a damp tea towel and rest for .

    Roll the dough out on a floured surface until very thin (about 2 mm). Cut into large rectangles or diamond shapes, roughly 10 × 15 cm. Dust with flour and set aside.
