1 piece onion — finely chopped
2 clove garlic — crushed
1 tsp ground cumin
1 tsp ground coriander
500 g carrots — peeled and diced
150 g red lentils — rinsed
1 l vegetable stock — hot
0.5 piece lemon — juiced
1 pinch salt — to taste
1 pinch black pepper — to taste
1 bunch fresh coriander — chopped, to serve

Instructions
Step by step

Heat the oil in a large saucepan over medium heat and cook the onion for until softened.

Add the garlic, cumin and ground coriander and stir for until fragrant.

Tip in the carrots and lentils, pour over the hot stock and bring to a simmer.

Cover and cook for until the carrots and lentils are tender.

Blend until smooth using a stick blender or in batches in a jug blender.

Stir in the lemon juice, taste and adjust seasoning.

Ladle into bowls and scatter with fresh coriander to serve.
