200 g rolled oats
50 g plain flour
0.5 tsp baking powder
0.25 tsp salt
80 g coconut oil — melted
100 ml maple syrup
1 tsp vanilla extract
80 g dried apricots — chopped
40 g pumpkin seeds

Instructions

Preheat your oven to 180°C (160°C fan) and line a 20 cm square tin with baking parchment.

In a large bowl, combine the oats, flour, baking powder and salt.

In a jug, whisk together the melted coconut oil, maple syrup and vanilla.

Pour the wet mixture into the dry ingredients and stir until everything is evenly coated.

Fold in the chopped apricots and pumpkin seeds.

Press the mixture firmly into the prepared tin, smoothing the top with the back of a spoon.

Bake for 20– until golden at the edges and just set in the centre.

Leave to cool completely in the tin before lifting out and cutting into 12 squares.
