100 g mature Cheddar cheese — grated
1 piece eating apple — grated, skin on
2 piece medium eggs — beaten
150 ml semi-skimmed milk
1 tbsp pure maple syrup — 100% pure
1 tsp baking powder
0.5 tsp ground cinnamon
0.25 tsp fine sea salt

Instructions

Preheat the oven to 180 °C (160 °C fan) and line a 20 cm square baking tin with parchment.

In a large bowl, combine the oats, Cheddar, grated apple, baking powder, cinnamon and salt.

In a jug, whisk together the eggs, milk and maple syrup, then pour into the oat mixture and stir until evenly combined.

Tip the batter into the prepared tin, smooth the top, then bake for 25– until golden and firm to the touch.

Cool in the tin for , then turn onto a wire rack; cut into nine squares once fully cooled.
