800 g pork loin joint — boneless, fat trimmed
3 tbsp maple syrup
2 tbsp wholegrain mustard
1 tbsp olive oil
2 piece eating apples — cored and cut into wedges
1 piece red onion — peeled and cut into wedges
4 piece fresh thyme — sprigs
2 clove garlic — peeled and sliced
1 tsp black pepper — freshly ground
1 tsp sea salt

Preheat the oven to 200°C (180°C fan).

Pat the pork loin dry with kitchen paper and season all over with salt and black pepper.

In a small bowl, whisk together the maple syrup, wholegrain mustard and olive oil.

Place the pork in a roasting tin and brush half the maple-mustard glaze over the top and sides.

Scatter the apple wedges, onion wedges, thyme sprigs and sliced garlic around the pork.

Roast for , then brush the remaining glaze over the pork.

Return to the oven and roast for another 20–, or until the internal temperature reaches 63°C and the juices run clear.
