1 piece eating apple — cored and thinly sliced
0.5 piece cucumber — sliced
4 piece radishes — thinly sliced
3 tbsp olive oil
1 tbsp white wine vinegar
1 tsp wholegrain mustard
0.25 tsp sea salt
0.25 tsp black pepper — freshly ground

In a large salad bowl, combine the salad leaves, apple slices, cucumber and radish slices.

In a small bowl or jar, whisk together the olive oil, white wine vinegar, wholegrain mustard, salt and black pepper until emulsified.

Gently fold the flaked smoked mackerel through the salad.
