1 tbsp olive oil
1 piece onion — diced
1 piece carrot — peeled and diced
2 clove garlic — minced
1 tbsp fresh ginger — finely grated
1 tsp ground cumin
0.5 tsp ground cinnamon
200 g red lentils — rinsed
1 piece eating apple — peeled, cored and diced
900 ml vegetable stock — ensure vegan
2 tbsp fresh coriander — chopped, for garnish

Instructions
Step by step

Heat the olive oil in a large saucepan over medium heat. Add the onion and carrot and cook for 5– until softened.

Stir in the garlic, ginger, cumin and cinnamon and cook for until fragrant.

Add the red lentils, diced apple and vegetable stock. Bring to the boil.

Reduce the heat and simmer, uncovered, for 20–, stirring occasionally, until the lentils and apple are very tender.

Taste and adjust seasoning if needed. For a smoother texture, use a stick blender to partially blend the soup, leaving some chunks for texture.

Ladle into bowls and garnish with fresh coriander before serving.
