500 ml clear apple juice — check label for vegan clarity
50 g caster sugar
2 tsp agar flakes
2 tbsp Irish whiskey — omit or replace with extra apple juice for younger children
1 tbsp lemon juice

Pour the apple juice into a small saucepan and sprinkle over the agar flakes. Leave to stand for .

Bring to a gentle simmer over medium heat, stirring frequently, and cook for 3– until the agar has completely dissolved.

Stir in the sugar and lemon juice, whisking until the sugar dissolves.

Remove from the heat and stir in the whiskey.

Cool to room temperature, then refrigerate for at least 2 hours until firmly set.
