600 g beef sirloin or rump — cut into 3 cm cubes
1 tsp coarse sea salt
2 tbsp vegetable oil — for grilling
3 piece ripe tomatoes — finely diced
1 piece red onion — finely chopped
1 piece fresh green chilli — finely chopped, seeds in or out
2 tbsp fresh coriander — chopped
2 tbsp lemon juice — freshly squeezed
0.5 tsp fine sea salt — for relish
4 piece crusty white bread rolls — to serve

Pat the beef cubes dry with kitchen paper and season all over with the coarse sea salt.

Heat a large cast-iron griddle or heavy frying pan over high heat until smoking. Add the vegetable oil.

Working in batches if necessary, add the beef cubes in a single layer and cook without moving for , until a dark crust forms.

Turn the cubes and cook for another for medium-rare, or longer if you prefer well-done. Remove and keep warm.

Meanwhile, combine the diced tomatoes, red onion, green chilli, coriander, lemon juice, and fine sea salt in a bowl. Toss gently and taste for seasoning.

Serve the hot beef cubes on a platter or in bread rolls, with the tomato relish spooned generously over the top.
