3 tbsp maple syrup
2 tbsp soy sauce
1 tsp Dijon mustard
2 clove garlic — minced
300 g broccoli — cut into florets
1 piece red pepper — sliced
2 tbsp olive oil
1 pinch black pepper — to taste
1 piece lemon — cut into wedges

Preheat your oven to 200°C (180°C fan).

In a small bowl, whisk together maple syrup, soy sauce, Dijon mustard and minced garlic.

Arrange the broccoli florets and sliced red pepper on a large baking tray. Drizzle with olive oil and season with black pepper, then toss to coat.

Place the salmon fillets on the tray among the vegetables, skin-side down if using skin-on.

Brush the maple glaze generously over the top of each salmon fillet.

Roast in the oven for 15– until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and lightly charred.
