600 g Brussels sprouts — trimmed and halved
2 tbsp extra virgin olive oil
2 clove garlic — crushed
1 pinch black pepper — to taste
40 g flaked almonds
1 piece lemon — zested

Toss the halved Brussels sprouts in a large bowl with the olive oil, crushed garlic and a generous pinch of black pepper until evenly coated.

Spread them cut-side down in a single layer on a large baking tray—don't crowd them or they'll steam instead of roast.

Roast for 20–, turning halfway, until the edges are deeply golden and crispy.

Meanwhile, toast the flaked almonds in a dry frying pan over medium heat for 2–, shaking frequently, until fragrant and lightly browned. Remove from heat immediately.
