4 piece eating apples (Braeburn or Gala) — cored, top sliced off
60 g rolled oats
1 tsp ground cinnamon
1 piece lemon — zested and juiced
1 tbsp extra virgin olive oil or melted unsalted butter
100 ml water
0.25 tsp ground ginger

Instructions
Step by step

Preheat your oven to 180°C (160°C fan).

Use an apple corer or small knife to remove the core from each apple, leaving the base intact. Score a shallow line around the equator of each apple to prevent splitting.

In a small bowl, mix the rolled oats, cinnamon, ginger, lemon zest and olive oil (or butter) until combined.

Stuff each cored apple with the oat mixture, pressing it down gently, and place the apples upright in a small baking dish.

Pour the lemon juice and water into the base of the dish around (not over) the apples.

Cover loosely with foil and bake for , then remove the foil and bake for a further 10– until the apples are tender when pierced with a knife and the oat topping is golden.

Let cool for before serving warm, spooning over any juices from the dish.
