  • 300 g sweet potato — peeled and cubed

  • 200 g cassava — peeled and cubed, or substitute potato

  • 2 piece bay leaves

  • 1 tsp paprika

  • 0.5 tsp black pepper

  • 1.5 tsp salt — or to taste

  • 1.5 l water

  • 200 g cabbage — roughly chopped

    Drain the soaked beans and rinse well. Place them in a large heavy pot with the hominy, diced pork, sliced chorizo, chopped onion, garlic, bay leaves, paprika, black pepper and salt.

    Pour in the water and bring to the boil over high heat. Skim any foam from the surface.

    Reduce the heat to low, cover, and simmer gently for , stirring occasionally. The beans should be tender and the liquid reduced.
