2 pieces lobster tails & claws — cooked and meat removed
2 tbsp mayonnaise
1 tbsp crème fraîche
1 small garlic clove — finely grated
0.5 pieces lemon — juice and zest
1 tbsp chives — finely chopped
1 tbsp parsley — finely chopped
1 tsp Dijon mustard
50 g butter
0.5 tsp smoked paprika or chilli flakes
salt — to taste
black pepper — to taste

Cut the lobster meat into generous chunks.

In a bowl, mix the mayonnaise, crème fraîche, garlic, lemon zest, lemon juice, Dijon mustard, chives and parsley.

Season with salt and black pepper, then gently fold through the lobster.

Melt the butter in a pan over medium heat and add the lobster mixture.

Warm gently for a minute or two — you don’t want to overcook the lobster.

Add the smoked paprika or chilli flakes and a little extra lemon juice.

Meanwhile, split the brioche rolls from the top and toast them in butter until golden and crisp on the outside.

Fill the toasted rolls generously with the warm creamy lobster, then spoon over some of the garlic butter from the pan.

Finish with fresh parsley, chives, a little lemon zest and a pinch of chilli.
