Step by step

    Drain and rinse the soaked white beans thoroughly.

    Heat the olive oil in a large heavy-based pot over medium-high heat. Add the pork shoulder cubes and brown on all sides for 5– until well coloured. Remove and set aside.

    In the same pot, add the chorizo slices and cook for 2– until they release their oil and begin to crisp. Remove and set aside with the pork.

    Add the chopped onion to the pot and cook for until softened. Stir in the garlic, smoked paprika and cumin; cook for until fragrant.

    Return the pork and chorizo to the pot. Add the drained beans, bay leaves and vegetable stock. Bring to the boil, then reduce the heat to low. Cover and simmer gently for , stirring occasionally.
