    Make the roff (stuffing paste): In a mortar and pestle or small food processor, combine the parsley, spring onions, 2 garlic cloves, half the scotch bonnet, 1 tablespoon oil, and ½ teaspoon salt. Pound or blend to a thick paste.

    Cut 3–4 deep slits into each fish piece. Rub the roff paste generously into the slits and all over the fish. Season with salt and pepper. Set aside to marinate for .

    Heat 3 tablespoons oil in a large, heavy-based pot over medium-high heat. Fry the fish pieces for 3– per side until golden brown. Remove and set aside on a plate.
