150 g rolled oats
80 g ground almonds
60 g pecans — roughly chopped
40 g flaked almonds
1 piece ripe banana — mashed
3 tbsp almond butter — unsweetened
2 tbsp rapeseed oil
0.5 tsp ground cinnamon
1 tsp vanilla extract

Instructions
Step by step

Preheat the oven to 170°C (150°C fan) and line a 20 cm square tin with baking parchment.

In a large bowl, combine the oats, ground almonds, chopped pecans, flaked almonds and cinnamon.

In a separate bowl, mash the banana until smooth, then stir in the almond butter, rapeseed oil and vanilla extract.

Pour the banana mixture over the dry ingredients and stir thoroughly until everything is evenly coated.

Press the mixture firmly into the prepared tin using the back of a spoon or spatula.

Bake for 25– until the top is golden and the edges are just set.

Remove from the oven and cool completely in the tin before cutting into 12 squares.

Store in an airtight container for up to five days.
