250 g Rolled oats — use traditional or jumbo
2 piece Ripe banana — mashed well
50 g Ground almonds
100 g Fresh blueberries
100 g Fresh raspberries
100 ml Unsweetened almond milk
1 tsp Vanilla extract
1 tsp Ground cinnamon
1 tsp Baking powder

Instructions

Preheat the oven to 180 °C (fan 160 °C) and line a 20 cm square tin with baking parchment.

In a large bowl, mix oats, ground almonds, cinnamon and baking powder.

In a separate bowl, combine mashed banana, almond milk and vanilla extract.

Pour wet mixture into dry, stir until just combined, then gently fold through half the blueberries and raspberries.

Tip batter into prepared tin, spread evenly and scatter remaining berries on top.

Bake for 25– until golden at the edges and set in the centre.

Cool completely in the tin, then slice into 12 squares.

Store in an airtight container in the fridge for up to 4 days.
