1 tbsp olive oil
1 piece onion — peeled and diced
2 clove garlic — peeled and crushed
1 piece carrot — peeled and diced
1 stalk celery — trimmed and sliced
400 g tinned chopped tomatoes
400 g cannellini beans — tinned, drained and rinsed
200 ml chicken stock
1 tbsp tomato purée
1 tsp dried thyme
1 piece bay leaf
1 pinch salt and black pepper — to taste

Instructions
Step by step

Heat the olive oil in a large casserole dish or deep frying pan over medium heat.

Add the sausages and brown them all over, about 5–, then remove and set aside.

In the same pan, add the onion, carrot and celery. Cook gently for until softened.
