300 g beef mince
200 g pork mince
1 piece onion — finely grated
3 clove garlic — minced
1 tsp sweet paprika
0.5 tsp cayenne pepper
1 tsp salt
0.5 tsp black pepper — freshly ground
100 g kajmak — or substitute soured cream mixed with butter
4 piece flatbreads — such as lepinja or pita
1 piece red onion — thinly sliced for serving
1 tbsp vegetable oil — for grilling

In a large bowl, combine the beef mince, pork mince, grated onion, minced garlic, sweet paprika, cayenne pepper, salt, and black pepper.

Use your hands to mix thoroughly for 2– until the mixture becomes sticky and cohesive.

Divide the mixture into 4 equal portions and shape each into a thick, round patty about 1.5 cm thick.

Cover and refrigerate for at least to allow the flavours to meld.

Preheat a grill or griddle pan over medium-high heat and lightly oil the surface.

Grill the patties for 5– on each side, until well charred on the outside and cooked through (internal temperature should reach 70°C).

Warm the flatbreads on the grill for about per side.

Spread a generous dollop of kajmak on each flatbread, place a pljeskavica on top, and garnish with sliced red onion.

Serve immediately while hot, optionally with pickled vegetables and ajvar.
