    Heat the oil in a large heavy-bottomed pot or Dutch oven over medium-high heat until shimmering.

    Add the lamb chunks and brown on all sides, about 8– total. Remove and set aside.

    Add the sliced onions to the pot and cook for until softened and lightly golden.
