3 medium cucumbers — sliced
1 whole red onion — thinly sliced
1 whole red bell pepper — sliced
1 whole yellow bell pepper — sliced
3 cloves garlic — minced
0.5 cup white vinegar
0.25 cup water
2 tbsp olive oil

Prepare the vegetables: Wash the cucumbers and slice them into thin rounds or half-moons. Slice the red onion and both bell peppers into thin strips. Thinly slice the garlic.

Make the pickling liquid: In a bowl, combine ½ cup white vinegar, ¼ cup water and 2 tbsp olive oil. Mix well.

Layer the jar: Add the cucumbers, red onion, red and yellow peppers, and garlic to a clean glass jar. Pack the vegetables in fairly tightly but don't crush them.

Add the liquid: Pour the vinegar mixture into the jar, making sure the vegetables are well coated. Press the vegetables down gently if necessary.

Seal and refrigerate: Close the jar tightly and place it in the refrigerator.

Let the flavours develop: Leave for at least 2–4 hours, although the flavour will be better if left overnight.

Serve: Give the jar a gentle shake before serving. Keep refrigerated and use within a few days.
