  • 2 Tins Kidney Beans

  • 2 Tbsp Olive Oil

  • 4 Onions — finely chopped

  • 4 cloves Garlic — finely chopped

  • 3 Sticks Celery — diced

  • 2 Red Chillis — seeded and finely chopped

  • 8 oz streaky bacon lardons

  • 1 Tbsp Ground Cumin

  • 1 Tbsp Ground Paprika

  • 1 Heaped Teaspoon coriander

  • 1 Heaped Teaspoon Fennel Seeds

  • 1 Heaped Teaspoon Cayenne

  • 1 Heaped Teaspoon Black Pepper

  • 0.5 Tsp Ground Cinnamon

  • 1 Tbsp Chopped Fresh Oregano — (or freeze dried)

  • 2 Lbs Coarse Ground Venison or Aberdeen Angus Ground Beef

  • 2 Tsp Unsweetened Cocoa Powder

  • 2 Squares Lindt Dark Chocolate — (70%+ Cocoa solids)

  • 2 Tins Chopped Tomatoes

  • 2 Heaped Tbsp Tom Puree

  • 1 Bay Leaf

  • 2 Pints Fresh Chicken/Veg Stock — (can use Bouillon)

  • Salt — to taste

Instructions

Step by step

    Heat oil.

    Add: Onions, Garlic, celery and chillis.

    Cook for .

    Add Bacon.

    Cook for 10-.

    Add Meat.

    Cook for 10-.

    Stir in: Cocoa, chocolate, beans, tomatoes, tomato puree, Bay Leaf & 1-1½ Pints of the stock.

    Bring To The Boil.

    Season with salt.

    Simmer for 2-2½ hours adding more stock if necessary.
