1 piece bone-in Prime Rib — (Standing Rib Roast, 3–4 ribs)
0.5 cup unsalted butter — softened
6 cloves garlic — minced
2 tbsp fresh rosemary — finely chopped
2 tbsp fresh thyme — finely chopped
1 tbsp coarse sea salt
1 tbsp freshly cracked black pepper

Bring the roast to room temperature for 2 hours before cooking.

Mix softened butter, minced garlic, rosemary, thyme, salt, and pepper into a thick paste. Slather the paste evenly over all sides of the beef.

Preheat oven to 500°F (260°C). Roast bone-side down for to form a crisp crust.

Reduce heat to 325°F (160°C). Roast for another 1.5 to 2 hours until the internal temperature reaches 120°F (49°C) for medium-rare.

Transfer to a board, tent loosely with foil, and rest for before carving.
